In the early 1700’s Gingerbread became widely popular across the North West of England. Production in Ormskirk can be dated as early as 1732.

The ladies who made it at home would take it to a local bakers and use the giant ovens to have it baked and would then sell it to the general public and to coach travellers at the many staging Inns dotted around.

As times changed and transport progressed to trains, the ladies would wait at Ormskirk station to sell to arriving visitors and, they would also board the trains and walk up and down the carriages selling their sweet treats to passengers.

One particular fan of Ormskirk Gingerbread was King Edward VII who liked it so much that he would place orders for it to be despatched to London.

We relaunched our own version based on the original recipe but with a few tweaks to suit modern tastes, we changed the harder consistency to a softer, crumbly texture and reduced the saltiness.

Famous faces who have tried Mr Thompson’s Ormskirk Gingerbread include Princess Anne, Jay Blades from BBC’s The Repair Shop, Jon Culshaw and The Hairy Bikers themselves!

We were honoured to have Si and Dave come to our bakery and spend the afternoon baking this beautiful slab with us and yessss ,cups of tea and lots of gingerbread were scoffed afterwards by us all.

We also supply wedding favours. A half slab wrapped, twined and personalised for your special day.
